- 1 medium head broccoli – chopped
- 2 zucchini – chopped
- 1 red bell pepper – diced
- 1 green bell pepper – diced
- 8 cherry tomatos – halved
- 1 onion – diced
- 2 cloves garlic – finely chopped
- 1 tablespoon tamari sauce
- 2 teaspoons mixed herbs
- Black pepper and salt to taste
- 1/2 cup soya or plant based milk
- Little water
- 1 block vegan cheese – grated
- Oil for cooking
- 1 tablespoon olive oil
- 1 (500g) packet spelt penne pasta
- Boil pasta as per instructions and drain.
- In a pan heat oil, add onions, garlic, zucchini and bell peppers and sauté.
- Then add broccoli, tomatoes and herbs and spices stir then add a little water and cover until the broccoli is cooked.
- Add the pasta, cheese and milk to the vegetables ad stir well.
- Add mixture to a large baking dish, sprinkle with more cheese and oil.
- Bake in oven on a medium heat until golden on top.
