  • 1 medium head broccoli – chopped
  • 2 zucchini – chopped
  • 1 red bell pepper – diced
  • 1 green bell pepper – diced
  • 8 cherry tomatos – halved
  • 1 onion – diced
  • 2 cloves garlic – finely chopped
  • 1 tablespoon tamari sauce
  • 2 teaspoons mixed herbs
  • Black pepper and salt to taste
  • 1/2 cup soya or plant based milk
  • Little water
  • 1 block vegan cheese – grated
  • Oil for cooking
  • 1 tablespoon olive oil
  • 1 (500g) packet spelt penne pasta
  • Boil pasta as per instructions and drain.
  • In a pan heat oil, add onions, garlic, zucchini and bell peppers and sauté.
  • Then add broccoli, tomatoes and herbs and spices stir then add a little water and cover until the broccoli is cooked.
  • Add the pasta, cheese and milk to the vegetables ad stir well.
  • Add mixture to a large baking dish, sprinkle with more cheese and oil.
  • Bake in oven on a medium heat until golden on top.
