- 2 large block of firm tofu – diced
- 1 onion – diced
- 3 cloves garlic – chopped
- 2 medium tomatoes – diced
- 1 red chilli pepper – sliced and de seeded
- 1 teaspoon cumin seeds
- 1 tablespoon tamari sauce
- 2 teaspoon ground turmeric
- 1 tablespoon mild curry powder
- Salt and black pepper to taste
- 1 cup coconut milk
- 1 – 2 tablespoons coconut oil for sautéing
- 1 tablespoon fresh parsley – chopped
- Heat a pan with oil and sauté the onions with cumin seeds, then add the chilli pepper and garlic and tofu. Mix and sauté until the tofu is slightly golden brown.
- Add all the spices and tomatoes. Mix.
- Add enough coconut milk for a thick sauce and simmer for a few minutes. Add parsley and serve with rice or quinoa.
