Tofu Curry

  • 2 large block of firm tofu – diced
  • 1 onion – diced
  • 3 cloves garlic – chopped
  • 2 medium tomatoes – diced
  • 1 red chilli pepper – sliced and de seeded
  • 1 teaspoon cumin seeds
  • 1 tablespoon tamari sauce
  • 2 teaspoon ground turmeric
  • 1 tablespoon mild curry powder
  • Salt and black pepper to taste
  • 1 cup coconut milk
  • 1 – 2 tablespoons coconut oil for sautéing
  • 1 tablespoon fresh parsley – chopped

 

  • Heat a pan with oil and sauté the onions with cumin seeds, then add the chilli pepper and garlic and tofu. Mix and sauté until the tofu is slightly golden brown.
  • Add all the spices and tomatoes. Mix.
  • Add enough coconut milk for a thick sauce and simmer for a few minutes. Add parsley and serve with rice or quinoa.
