Pholourie Balls

Pholourie is a snack food commonly eaten in Trinidad and Tobago.


  • 1 cups unbleached all purpose white flour
  • 1/4 Cup Yellow split pea flour
  • 1 Teaspoon dried yeast
  • 1 Teaspoon salt
  • 1 Teaspoon baking powder
  • 1 Teaspoon turmeric
  • 1 teaspoon cumin
  • Small bunch fresh coriander leaves
  • 4 Cloves garlic – finely chopped or minced
  • 1 small scotch bonnet pepper – deseeded
  • 1 t0 2 Cups water
  • Oil for frying



Mix dry ingredients well in a mixing bowl.

In a separate bowl blend (you can use a hand blender) coriander, garlic and pepper and tablespoon of water to make green sauce. Add a tablespoon of the mixture to the dry ingredients; add water and mix * you want a loose dough mixture.

Cover and leave for approx. 1 hour.

Heat oil in a deep pan until hot, use a teaspoon (best to wet first) and drop into hot oil. Repeat and cook until they puff and turn golden brown.

Leave on a large plate or dish lined with paper towel to absorb excess oil.


Serve with Mango Chutney or Green sauce
