Pholourie is a snack food commonly eaten in Trinidad and Tobago.
- 1 cups unbleached all purpose white flour
- 1/4 Cup Yellow split pea flour
- 1 Teaspoon dried yeast
- 1 Teaspoon salt
- 1 Teaspoon baking powder
- 1 Teaspoon turmeric
- 1 teaspoon cumin
- Small bunch fresh coriander leaves
- 4 Cloves garlic – finely chopped or minced
- 1 small scotch bonnet pepper – deseeded
- 1 t0 2 Cups water
- Oil for frying
Method
Mix dry ingredients well in a mixing bowl.
In a separate bowl blend (you can use a hand blender) coriander, garlic and pepper and tablespoon of water to make green sauce. Add a tablespoon of the mixture to the dry ingredients; add water and mix * you want a loose dough mixture.
Cover and leave for approx. 1 hour.
Heat oil in a deep pan until hot, use a teaspoon (best to wet first) and drop into hot oil. Repeat and cook until they puff and turn golden brown.
Leave on a large plate or dish lined with paper towel to absorb excess oil.
Serve with Mango Chutney or Green sauce
