Jerk Tofu Recipe

Jerk Tofu

Being vegan doesn’t mean you have to miss out on your favourite caribbean dishes. Growing up I used to love Jerk chicken so this is my take on Jerk Tofu Vegan style!.

 

  • Block of organic firm tofu (350g)– drained and excess water removed (soak up excess water with paper towels – tofu should be almost dry to touch)
  • 1 teaspoon ground allspice
  • 1 teaspoon black pepper
  • 1 small scotch bonnet
  • 4 whole cloves
  • 4 spring onions
  • 4 garlic cloves
  • 1 cup dark soy sauce
  • 1 cup molasses sugar
  • Juice of 1 lime
  • Sprig of thyme
  • Salt to taste
  • ½ tablespoon of oil – sunflower

Method

Place all ingredients apart from tofu in a small blender or nutri bullet. Blend until smooth. Get rid of any exccss water from the tofu ( use paper towels ) and slice the Tofu into thick slices around 6 -8 pieces place in a deep dish a pour over marinade. Coat each piece and leave for a few hours or overnight in the fridge.

Heat a grill pan with a little oil. When pan is hot cook the tofu on both sides until it becomes a bit charred around the edges or you can place the tofu pieces on an oiled baking tray and grill until deep brown on both sides.

Serve with mixed vegetables and rice or you can eat cold in a wrap with salad.
