Easy Vegan Burger Recipe
- 1 Can of chickpeas – drained and dry
- 2 Cups mushrooms – sliced
- 1 Cup Spinach
- 2 Cloves garlic – finely chopped
- 1 Green pepper- diced
- 1 Green chilli pepper – diced
- 1 Tablespoon Tamari Sauce
- 1 Teaspoon cayenne Pepper
- Salt to taste
- 1 Teaspoon of black pepper
- 1 Tablespoon of nutritional yeast
- 1 Tablespoon of coconut or olive oil
- 1 Tablespoon all-purpose flour
Method
Place on the stove a large pan add oil and heat, add the onions and sauté, then add garlic, chilli, green pepper, spinach and mushrooms. After a couple of minutes remove from heat and cool mixture. In a food processer (you can use a potato masher as alternative) add the chickpeas with the remaining ingredients (including the cooled mushrooms – drain the excess water from the mushrooms) and pulse – you still want to see some texture to the mix. If the mixture is a bit wet add a little flour. Shape into patties and place on a lightly oiled baking tray brush with each pattie with a little oil and bake in the oven (180, gas mark 6) until they turn brown.
*Serve in a burger bun with salad
