Easy Pumpkin and Sultana Cake


1 small pumpkin- roasted and remove flesh

½ cup sultanas

1 cup raw cane sugar

1 cup  – self raising flour

1 tablespoon soft vegan Margarine

1 tin coconut milk

1 teaspoon apple cider vinegar

½ teaspoon mixed spice

1 teaspoon vanilla extract



Add the pumpkin flesh and sultanas and raw cane sugar to a mixing bowl and mix well, add coconut milk, apple cider vinegar, margarine and vanilla extract. Stir ingredients and add the flour (little at a time) until you get a cake batter consistency. Pour into a baking dish and cook  Bake until a toothpick inserted into the centre comes out clean, (fan /conventional oven 160)
